How To Tell A Cheese's Story
Did you know the French cheese Le Secret de Compostelle is a tribute to the secret paths that pilgrims took through the mountain on their way to Santiago de Compostela in Galicia, Spain; or that Marieke Gouda was created in Wisconsin by a Dutch woman straight from Holland who wanted a more traditional option!
Explaining cheese is a lot like talking about a book or your favorite movie. There is the contextual element, the literal element, and the personal element. Where does this cheese exist? What is the cheese made from? What flavors jump out at me in the cheese?
Some cheeses are only made in certain seasons because of the cow’s diet. Rogue River Blue, for example, is an autumnal cave aged dessert cheese that has hints of vanilla and hazelnut. Notes like these allow us to treat the delicacy like a character in a book. Every cheese has a history and a story to tell.
